Right after I had Nadia, my sister came over and made me a big pot of what I have come to call Super Oatmeal. Between lack of sleep, raging hormones and burning up a bunch of calories by running your own internal dairy, the new mom gets very hungry! This oatmeal is easy to make ahead of time in a big pot then just microwave each morning. It packs enough protein, carbs, fiber, iron and vitamins to keep you going no matter how many times you got up to spend some time with your very awake baby in the middle of the night. Even if you’re not a mom and you get tons of sleep, you should make it anyway. It’s heearty and healthy and yummy – where could you go wrong?
3 cups steel cut oats
6 cups water
an apple, cut into small pieces (1/2 bite size)
1/2 cup raw almonds, coarsley chopped
1 cup shredded carrots (I use a food processor)
1/4 cup raisins, currants, or golden raisins
1 tablespoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon cloves
1/2 teaspoon allspice
Put oats and water in a large saucepan with a pinch of salt. Bring to boil. After 10 minutes, add the rest of the ingredients. Boil for about 10 more minutes. Serve with a bit of milk and some brown sugar if you’d like. Enjoy!
